Brewing Instructions for Wild Tea
How much tea do I use?
Use approximately 4-5g of tea for 120-180ml of water. If you don’t have a scale to measure, don’t worry! Tea is very friendly; you can experiment with amounts and see what you like.
Steeping the Tea
It is recommended to do multiple, short-timed infusions to experience to evolution of flavors. In general, you can start with a short steeping time of 15-20 seconds and gradually steep for longer and longer during your tea drinking ritual. Some teas have special instructions, which are noted below.
Rinsing the Tea
For some teas, it is recommended to rinse the tea before drinking. This rinsing is not to clean the tea (because it is already pure and free of chemicals/fertilizers/pesticides, etc). Rinsing is done to awaken the tea, helping unfurl the leaves and bring out the aroma. You can rinse the tea by putting it in a tea pot, pouring hot water over it for 3-5 seconds and then discarding that water. You may also wake up the tea - before putting it in the teapot - by quickly heating it on a dry, cast-iron skillet. Just take care that it does not burn! You can experiment with both methods and see which you prefer.
Preparing Your Teaware
Pour hot water into your teapot and cups before pouring your tea. This will help to warm them and will enhance your tea drinking ritual.
How to Brew Your Tea
Leaf of Immortality - Green Tea
Water temperature: 80-85°C/175-185°F
Rinse tea? No
Notes: If the water is too hot or boiling, it will scorch the leaves and create a bitter taste.
Lotus Tea
Water temperature: 80-85°C/175-185°F
Rinse tea? No
Notes: You can brew both the tea and pieces of lotus flower together. Avoid steeping too long to prevent bitter taste
Fairy Tea
Water temperature: 80-85°C/175-185°F
Rinse tea? No
Notes: First steeping should be a little longer – about one minute. Subsequent steepings can begin at 15-20 seconds and increase with each infusion.
Mountain Flame - Yellow Tea
Water temperature: 85-95°C/185-200°F
Rinse tea? Optional (this is a great tea to try waking up in a cast-iron skillet! See notes above in the “Rinsing the Tea” section)
Rose Gem
Water temperature: 85-95°C/185-200°F

Water temperature: 95°C/200°F

Notes: To receive optimal benefits from this herbal tea, infuse with boiling water, cover, and let steep for 15-20 minutes. Drink after meals or before bedtime.
